February 13: Weekend of Fun Is... Fun!

Yesterday, G declared this weekend a "weekend of fun." If today is any indication, then we're in for a super weekend! Today we made pumpkin protein muffins and then went SWIMMING! It was so much fun. Both A and Baby B did *super* -- and this was Baby B's first time swimming. We went to the same community pool as we did for the birthday party A went to a few weekends ago. We went with our friends, Kathleen, Jim, and their son. It was also Little Jim's first time in the pool, and he did great as well. After swimming for about an hour, we got dressed and had muffins and juice for snack.

Baby B took a much-too-brief nap on the way home. G and A took naps once we got home. Baby B popped awake in an ill-fated attempt to get him into his bed. Since he was raring to go, I took him to Jo-Ann's for a quick trip -- art supplies for A. They are having a good sale this weekend. Well, Baby B was *not* impressed at my efforts to save a buck or two and shrieked mightily most of the time we were in the store. After beating a hasty retreat, I had hoped he would nap on the way home. But no. No nap.

When we got home, I woke up the snuggly sleeping G and A (repeatedly, in fact) and made dinner -- 30 minute ziti. Oh. My. Stars. Delicious. It goes something like this:

0. Preheat oven to 425 degrees
1. Boil water (plus 1 t salt) for pasta.
2. Cut veggies for sauce and toss in frying pan with a teaspoon or so of oil -- optional if you have decent sauce (A will only eat plain Prego. It's a little tame for G and my taste...). For veggies, I did 1/2 small onion, 1 cup mushrooms, 2 roasted red peppers and 2/3 cup sun-dried tomatoes. (Steps 1-2, 5 min total)
3. Add 1/2 pound whole wheat ziti to boiling water (Cook 11 minutes)
4. Add 1/2 jar prepared pasta sauce to veggies and heat thoroughly (while Step 3 is happening)
5. Mix 1 cup ricotta with 1 t dried thyme, 2 cloves minced garlic and 3 T cream cheese (again, while Step 3 is happening)
6. Spray casserole dish with nonstick spray.
7. Drain pasta and dump into sauce. Mix to coat pasta with sauce (1 minute)
8. Layer pasta - ricotta - pasta in casserole pan. Put 1 cup low-fat mozzarella on top. (1 minute)
9. Cook ziti in oven for 10 minutes (at 425 degrees, uncovered) -- I made garlic bread and salad here...
10. Broil ziti in oven on high for 3 minutes.

YUMMY. Going to keep this recipe handy for the future...
