Recipe: Ridiculously delicious pumpkin protein muffins

Alex wanted muffins this morning, and I wanted him to eat more protein... I got creative and everyone wins....

(makes 24 muffins)
Preheat oven to 350 degrees.

2 c whole wheat flour
3 t baking powder
1 t baking soda
2 T cinnamon
½ c soy protein powder
¾ c organic sugar
½ c mini chocolate chips (obviously optional)
Mix all of the above ingredients in large mixing bowl.

15 oz can pumpkin
1 c soymilk (or regular)
2 eggs
¼ c vegetable oil
2 t apple cider vinegar
Mix the ingredients from pumpkin to vinegar in a small mixing bowl. Once well mixed, pour into the large mixing bowl with the dry ingredients. Mix wet and dry ingredients until just mixed. Scoop into muffin tins lined with muffin papers. Bake 30-35 minutes. Delicious!!!
