June 29: Quiche, you are my friend (Recipe: Little B's Quiche)

Well, day one of the "Get Food Kid Friendly" at the Weebert household was a success, at least for Little B. Today I made quiche (or, savory tart one might call it). Little B *loves* quiche, but not so much on other egg dishes. I've included the recipe I developed, below, for quiche. It's really rather versatile and can be made as indulgent as you'd like.

The boys had a great day with Mimi and Hea. I heard that t-ball practice was pretty much uncontrolled anarchy, so that must have been fun.

Little B was a sleep boy again today, and ended up taking two naps. He's definitely teething, so we're in defense mode.

Little B's Quiche

4 eggs
1/2 c. milk (you chose how much fat is in it)
1 16-oz container of cottage cheese (again, pick your poison as to how much fat)
1 t garlic salt
3 T minced fresh basil
4 T chopped chives (chopped fine)
1 T thyme (mince small)
1/2 c shredded mozzerella
1 9-in pie crust, pre-baked for 15 minutes

Add eggs, milk, cottage cheese, and salt to blender (or food processor) and whiz until thoroughly blended and smooth. Add basil, thyme and chives. Pour into pie crust. Bake in 350 degree oven for 10 minutes. Add cheese. Continue baking until set. Let rest for 10 minutes before cutting. Or you can serve at room temperature.
