January 7: Windy, busy fun

Today was busy, but pleasant. Hea came over to hang out with Baby B and I had meetings most of the day. I met with A's preschool teacher (who is wonderful) in the afternoon and we went over some school options.

Once A and I got home, A took a big resta siesta with Hea -- Hea got two big naps today! Baby B also got an extra afternoon nap in. I made dinner and finished up work. All-in-all, not too exciting. Mimi got the night off, so she came over for dinner as well.

Dinner was Seitan Stew with Veggies and Beer Biscuits. Both recipes are below, at the request of Hea. After dinner, we played and hung out. A is starting to memorize "site words", so we learned the word "THE" tonight. So much fun!

After the boys went to bed, I started on my "Project of Shame" and put together an adorable pink and green baby quilt. I'll post photos after this weekend.

Beer (Drop) Biscuits (makes 12)

1 12-oz bottle of beer (I use Pacifico)
3 c. flour (part white, and part wheat)
1.5 T baking powder
1.5 t salt
0.5 c. sugar

Preheat over to 400 degrees F. Sift flour, baking powder, salt and sugar. in a medium-large bowl. Stir in beer until just mixed -- don't overmix. Oil 13x9 pan with spray. Use a tablespoon to spoon mixture into 12 roughly similarly-sized biscuits. Cook for 20 minutes on middle rack in oven. Check to see if done. We like biscuits a little lighter in color, but you can be the judge.

** As an alternative, you can just dump the dough into a prepared bread pan and bake for about an hour. Beer bread is almost as delicious as beer biscuits!

Seitan Stew with Veggies (Serves about 6)

1/2 white onion (large dice)
4 oz sliced button mushrooms
3 medium potatoes (washed and cubed)
1 c. shelled edamame
1 c. carrots (washed and cubed)
3 c. seitan (I use this recipe: http://www.postpunkkitchen.com/forum/viewtopic.php?id=15959, cubed into bite-sized pieces. For the seitan, you can also use the packaged stuff, it's just horribly expensive.)
4 c. vegetable broth
3 oz tomato paste
2 t dried thyme
2 t dried basil
2 t Mrs. Dash original
1 t salt
2 T margarine or butter

Heat soup pan over medium heat, add 1 T olive oil. Add onion and mushrooms. Cover and let cook for 3-4 minutes. Add potatoes and carrots, then add vegetable broth. Cover and let cook for about 10 minutes, stirring periodically. Add tomato paste, edamame, and seitan. Stir, then add thyme, basil, Mrs. Dash and salt. Cook 7 additional minutes. Taste and fix any seasoning imbalances. If you're short on broth, just add additional water or broth. Add margarine and stir gently one last time.
